Except during cleaning and maintenance operations, toilet room doors as specified under subsection (2)(l) of this Rule shall be kept closed. Additionally, the door must have an autoclosure device installed that will close the door completely, the existing device is not working properly.
  • 17C – physical facilities installed, maintained, and clean — Inspector Notes: After use, mops shall be placed in a position that allows them to air-dry without
    soiling walls, equipment, or supplies. Install a hook to hang mop over the mop sink basin.

Observed grill to have excessive grease and food debris stored on the food contact-surface. Observed ice scoops and sugar scoops stored with the handle touching the food product.

    RCA: Clean equipment regularly to eliminate contamination. Ensure handles of scoops are placed in containers with the handle facing up to eliminate contamination.

  • 6-1A – proper cold holding temperatures — Inspector Notes: Observed raw shrimp contained in beer cooler stored at 52F.

    CA: Employee discarded shrimp immediately.

  • 6-1B – proper hot holding temperatures — Inspector Notes: Observed stove holding vegetable/meat soup at 120F.

    RCA: All items in hot holding must be held at 135F or higher.

  • 11C – approved thawing methods used — Inspector Notes: Observed raw chicken wings being thawed at room temperature.

    CA: Employee turned water on to run over chicken and was informed of process to thaw raw meats.

  • 15A – food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Notes: Observed rags being used as shelf liner to store food contact (plates) and other non-food contact items.

    RCA: Use commercial grade shelf liner to store items on shelves.

  • 15B – warewashing facilities: installed, maintained, used; test strips — Inspector Notes: Observed expired test strips and quaternary tablets.

    RCA: Buy new tablets and test strips to test sanitizer buckets.

  • 16A – hot and cold water available; adequate pressure — Inspector Notes: Observed hot water in public restrooms reading at 60F. Observed water pressure to not be functioning properly within the hot water section of the water heater.

    RCA: Repair water heater supplying water to public hand sinks in both male and female restrooms. Ensure adequate pressure is available.

  • 17A – toilet facilities: properly constructed, supplied, cleaned — Inspector Notes: Observed employee restroom missing lidded trash receptacle.

    RCA: Place lidded trash can in employee restroom for sanitary napkins.

  • 17C – physical facilities installed, maintained, and clean — Inspector Notes: Observed floors, walls, and ceiling tiles coated with excessive debris, rust like material, or dust. Observed excessive amounts of food debris on floor surrounding prep counter.

    RCA: Clean floors, walls, and ceiling tiles regularly to eliminate chance of contamination by debris.
